The Evighedsmjøden from Mjødgård is inspired by how a völve in ancient times might have brewed his mead. The name "Evighedsmjød" comes from the fact that the brew is constantly being added with new wild herbs, which means that the taste experience is constantly evolving. It has a deep sweetness and a well-known Mjødgård profile with acidity from unripe gooseberries and sweetness from apples. The taste is complex and spicy, with herbs such as hawthorn, yarrow and spruce shoots, and the bitterness of walnuts adds an extra dimension to the experience.

Serving suggestions
The Evighedsmjøden has a semi-sweet taste, which brings associations to meadows and forest edges. The bitterness of the walnuts forms a base for the herbs, while berries and fruit contribute a light acidity. It can be served chilled as an aperitif or enjoyed for lunch with salads, fish, meat, less sweet desserts and pastries. It goes particularly well with aged cheeses such as Comté, Prästost, Vesterhavsost and cheddar, as well as fruits such as melon, dates and roasted figs.

Glass selection
To get the most out of the mead's complex flavor, port wine glasses or tulip-shaped glasses are recommended, which accentuate the sweetness. Serve slightly chilled at 8-10˚C for optimal enjoyment.
